Easy Oven Roasted Veggies
Cut up various veggies (any really), I enjoy:
- a head of broccoli cut in to florets
- 2½ cups of green beans
- 1 cup of baby carrots (or 3 normal carrots peeled & sliced)
- 1/2 green pepper sliced
- 1/4-1/2 cup olive oil
- sea salt
- freshly ground pepper
-Preheat oven to 400°
-Put all of your cut veggies in to a large bowl and use your hands to mix in the olive oil and salt and pepper. Stir around until evenly coated.
-Spread across a cookie sheet and put into the oven for 45 minutes, rotating and stirring every 15 minutes
I made oven roasted vegetables, chick’n seitan fried in olive oil with garlic powder, oregano and various other spices, and super buttery corn on the cob.

And if you’re too edge to use liqueur for cooking, I’m sure almond & vanilla extract would be yums.

Tofu Scrambles:
- 1/2 jalapeño (12¢)
- 1/2 bell pepper (48¢)
- 1/3 can of black beans (29¢)
- 1/3 can of corn (29¢)
- 1/2 yellow onion (way too small of a number)
- block of tofu ($1.30)
Eggplant parmesan meatball subs. Marinated eggplant slices were pan fried, covered with melted mozzarella and layered on home made garlic bread. They were then topped with meatballs cooked in a sweet tomato basil sauce and finally sprinkled with parmesan cheese before being hastily devoured.
